This unique program at a cooking school on Ama-cho, one of Japan’s oki islands in the Sea of Japan, features extensive fieldwork and hands-on sourcing of prime ingredients.
As well as cooking a wide variety of Japanese dishes, you’ll create sea salt from the local ocean, go fishing and turn your catch into himono (salted dried fish), make miso and tofu from scratch, and visit a rice farm to see the growing of a crop essential to Japan’s beloved sushi.
We are excited to be partnering with Ama-cho island to offer you this new course in Summer 2017. Features include: 11 days of washoku (Japanese food) cooking classes led by our team of chef-instructors plus 6 days of hands-on activities organized by the island to introduce you to local artisanal food producers and their generations-old traditional techniques.
