Tokyo-style sushi called nigiri is an art form in the hands of Chef Tezuka, the fourth generation chef at restaurant Matsunozushi. In this 3 hour class, students will start by learning how to prepare perfect sushi rice, then how to prepare fish, followed by assembling nigiri. In sushi making, knife skills are very important as cutting methods determine different tastes and textures. Chef Tezuka will share some of his most popular cutting methods.

During a multi-course meal at the end of the class, Chef Tezuka will give a history of sushi along with details about how an obsessive focus on high quality at every stage of the supply chain transforms simple ingredients into edible works of art.

An optional extra: Students can take a tour of Tokyo's Toyosu fish market. Chef Tezuka will accompany you to meet the vendors and suppliers he knows and trusts. You will pick out your own fish which will be used to make sushi later in the day. Learn how the taste of fish varies depending on where and how it's caught and then aged, and go with an appetite - Chef Tezuka will give you many opportunities to taste samples!

This 6 hour class builds on our 3 hour sushi class with more detail regarding fish preparation.
